Love this idea, mostly because fresh herbs are crazy expensive and I never use them all up before they go bad: chop up your herbs and stick them into an ice cube tray, then cover with olive oil and freeze.
Toss a cube or two into your pan whenever you’re in need, and presto: fresh herbs, all winter long.

It’s like I’ve been waiting for this all my life.

rich chocolate peanut butter cream
this makes a great dessert or breakfast that you can serve all at once or keep it throughout the week. consider it a mix between a mousse and a pudding - thick, creamy, and very chocolatey. serve with fresh fruit and/or nuts at the end of a big meal with friends - perfect!
blend together until smooth and creamy: 1 package firm silken tofu, 1/4 cup unsweetened almond milk, 1/4 cup unsweetened chocolate chips, 2 tbsp dutch-processed cocoa powder, 2-3 tbsp sweetened peanut butter, a dash vanilla extract, a small pinch sea salt, and a scant dash of cayenne.(make sure to read labels for milk ingredients when buying cocoa/chocolate chips, as always.)
chill in the fridge for a couple of hours or overnight.
serve very cold to four to eight people, or store in your fridge for 1-2 weeks.

Falafel Wraps with Fruit

Nutella Chocolate Lassi
Ingredients:
200 grams chilled thick yogurt
2 tbsp water
100 grams dark chocolate chunks
4 tbsp nutella at room temperature
2 tbsp cocoa powder
8 to 9 toasted Or roasted almonds sliced into juliennes
2 tbsp caster sugar Or brown sugar( I prefer less sugar you can add more if required)
a pinch of salt
few ice cubes(optional)
Directions:
Combine chocolate, cocoa and nutella into a microwave bowl with 2tbsp water. Microwave on high power for 60 secs Or until melted. Allow the chocolate to come to room temperature.

Avocado Pasta
Ingredients:
Whole wheat spaghetti1 large ripe Avocado, pitted and peel removed1 tablespoon fresh lime juice1 clove garlic, minced1/4 cup chopped fresh cilantro1/2 teaspoon kosher salt, or to tasteFreshly ground black pepper, to taste
Directions:
1. Bring water to a boil in a medium sized pot. Salt the water and add in your pasta, reduce heat to medium, and cook until Al Dente, about 8-10 minutes.
2. While the pasta is cooking, make the sauce by placing the avocado, garlic, lime juice, cilantro, salt and pepper into a food processor or blender. Process until smooth and creamy.
3. When pasta is done cooking, drain and place pasta into a large bowl. Add the sauce to the pasta and toss until pasta is well coated. Season with additional salt and pepper, if desired. Serve immediately.

Scrambled Eggs with Avocado, Onion, and Cheddar 

Ingredients 
1 small onion
1/2 firm-ripe California avocado
4 large eggs
2/3 cup grated extra-sharp Cheddar (about 2 ounces)
2 teaspoons unsalted butter
Garnish: chopped fresh cilantro sprigs
Preparation
 Chop onion. Halve, pit, and peel avocado and cut into 1/4-inch pieces. In a bowl whisk together eggs and Cheddar and season with salt and pepper. In a nonstick skillet heat butter over moderately high heat until foam subsides and sauté onion, stirring, until just beginning to soften, about 2 minutes. Add egg mixture and cook, stirring constantly, until eggs are just set, about 1 minute. Remove skillet from heat and stir in avocado.
Serve eggs garnished with cilantro.

**I used mozzarella cheese and about half of the onion. And I didn’t put cilantro. It turned out amazing and there’s enough for two people. Or one of me.
